Bibingka Recipe

Ingredients:

  1. 1 kilo Sticky Rice
  2. 1/2 kilo Dark Brown Sugar
  3. 385 ml Coconut Milk
  4. 5 1⁄2 cups Water
  5. Banana leaves

Process in Cooking Bibingka:

1. Rinse and drain sticky rice in a rice cooker or large saucepan.
2. Cook rice.
3. Combine coconut milk and 1 ¼ cups of the brown sugar in a saucepan. (Reserve 1 cup coconut milk mixture for step 7 and step 8)
4. Cook over medium heat for about 20 minutes, stirring constantly, until the mixture thickens.
5. Wilt banana leaves over low heat on electric surface unit or in microwave oven; line a 13 x 9 x 2-inch baking pan. Preheat electric oven to 350°F.
6. Stir remaining brown sugar into the hot rice; mix well.
7. Stir the ½ cup reserved coconut milk mixture into rice.
8. Put into prepared pan. Pour the reserved ½ cup coconut milk mixture over rice.
9. Bake for 20 minutes then broil for 5 minutes to brown top. Cool and cut into serving pieces.
10. Good for 40 people.
